Yes Diazo Dual Cure emulsions are my "go to" emulsions most of the time... the cost - time...

It is not just water, but when you add water to an ink degrader that caused the problems.

There is also a product from Easiway called 820 and also the 842 (I think its 842) that I use in the classes, I like them.

Diazo Dual Cure will typically hold better detail and is linked in two ways so is a bit stronger and resistant to chemicals than a Single sensitizer emulsion.

There is nothing wrong with a single sensitizer emulsion for various reasons, the price is more care with use of chemicals and exposure.
